Teaching Instructions

This is lesson 27 of 30 in the unit "From Fruit to Baking". Lesson Title: Muffin Production Lesson Description: Follow a muffin recipe, apply accurate measuring and gentle mixing, use the oven safely, and produce muffins with consistent portions and presentation.

Overview

Lesson 27 of 30 in From Fruit to Baking. Students work in groups to follow a muffin recipe, measure accurately, mix gently, portion consistently and use the oven safely. The teacher should preheat the oven and prepare ingredients and equipment before students enter.

Learning intentions

  • WALT follow a recipe in the correct sequence.
  • WALT measure ingredients accurately and mix gently to create a suitable muffin mixture.
  • WALT use kitchen equipment and the oven safely.
  • WALT portion and present muffins consistently.
  • WALT work cooperatively and hygienically in a production team.

Success criteria

  • I can measure ingredients using the correct tool and unit.
  • I can explain why muffin mixture should not be overmixed.
  • I can safely use equipment, oven gloves and the agreed kitchen procedures.
  • I can produce muffins with similar portions and an appealing presentation.

Curriculum links

  • Develop and evaluate food outcomes for a specific purpose, using practical knowledge and informed decision-making.
  • Select and use materials, ingredients, tools and equipment safely and efficiently.
  • Apply measurement, processing and presentation techniques to produce a fit-for-purpose food outcome.
  • Demonstrate collaboration, responsibility, self-management and reflection within a practical technology setting.

Lesson structure (45 minutes)

  1. 0–5 minutes – Hook and production goal Open with the muffin production introduction. Show a striking comparison of evenly portioned muffins and unevenly portioned muffins, then ask: “Which batch looks ready to sell, and what makes it consistent?” Share the learning intentions and success criteria.

  2. 5–12 minutes – Safety and technique demonstration Use the safety and technique slides while demonstrating handwashing, safe movement around benches, accurate measuring, the “cut and fold” mixing action, and filling cases to an even level. Emphasise that the teacher operates or supervises the oven, and that students use oven gloves only when specifically directed. Demonstrate how to check the recipe before adding each ingredient.

  3. 12–15 minutes – Team roles and recipe check Place students in five groups of five. Assign or confirm roles: equipment and hygiene lead, dry-measuring lead, wet-measuring lead, mixing lead, and portioning/recording lead. Distribute the muffin production recipe and checklist and have each group identify ingredients, equipment, quantities and the order of steps before beginning.

  4. 15–30 minutes – Muffin production Students wash hands, collect equipment and follow the recipe in their groups. They measure carefully, combine ingredients, and mix only until just combined. The teacher circulates, checking measurements, consistency of the mixture, hygiene and safe bench movement; students record any adaptations or problems on the worksheet.

  5. 30–35 minutes – Portion and prepare for baking Students use the same spoon or scoop for each muffin and portion the mixture evenly into the prepared cases. Groups check the batch against the worksheet checklist, tidy spills and place equipment in the washing area. The teacher checks trays before transferring them to the preheated oven.

  6. 35–41 minutes – Baking, clean-up and evaluation The teacher places trays in the oven and manages all hot equipment. While muffins bake, students clean benches and equipment, then use the production review slides to discuss: “What helped our portions stay consistent?” and “What would we change next time?” If muffins are not fully baked, explain that cooling and final tasting will occur at the next lesson.

  7. 41–45 minutes – Plenary and evidence of learning Groups briefly report one successful technique and one improvement. Students complete the final section of the muffin production recipe and checklist, rating their measuring, mixing, safety and teamwork. Collect worksheets and visually assess the batches for consistency and presentation.

Resources

  • Preheated oven and oven timer
  • Muffin ingredients, including the selected fruit, measured or ready for student measuring
  • Mixing bowls, scales, measuring cups and spoons
  • Muffin trays, paper cases, spoons or scoops and cooling racks
  • Oven gloves, aprons, handwashing supplies and sanitiser
  • Five prepared workstations for groups of five
  • the muffin production introduction
  • the muffin production recipe and checklist

Assessment

  • Observe students measuring, mixing, portioning, communicating and following hygiene and oven-safety procedures.
  • Check each worksheet for correct sequencing, recorded measurements, production notes and reflection.
  • Assess the finished batch informally for similar portion sizes, appropriate appearance and evidence of careful presentation.

Differentiation

  • Provide a visual recipe sequence, colour-coded equipment and pre-weighed ingredients for students who need support with reading, numeracy or organisation.
  • Pair students strategically and give each role a clearly stated responsibility; allow oral answers or teacher scribing where appropriate.
  • Use explicit demonstrations, short instructions and repeat key vocabulary such as portion, fold, consistency and hygiene for EAL learners.
  • Extend confident students by asking them to justify the mixing method, calculate the number of muffins produced from the batch, or suggest a justified presentation improvement.
