Lesson structure (45 minutes)

  1. 0–5 minutes – Hook and learning intentions Open with the smoothie comparison hook and lesson goals. Show two contrasting smoothie images or descriptions and ask: “Which one would you choose, and what evidence supports your decision?” Briefly explain that professional food designers evaluate before modifying a product.

  2. 5–11 minutes – Establish evaluation criteria Revisit the five criteria on the evaluation criteria slides: consistency, flavour, colour, presentation and safe processes. Model precise language, such as “smooth and pourable”, “too sour”, “bright pink”, “served in a clean, suitable container” and “hands washed before preparation”. Clarify that students may dislike a flavour while still giving respectful, useful feedback.

  3. 11–15 minutes – Safety and tasting expectations Review hygiene and tasting routines using the safety and tasting instructions. Students wash or sanitise hands, remain seated while tasting, use individual spoons or cups, and do not share food. Check the class allergy and dietary information before offering samples; provide an alternative observation task for any student who cannot taste. Explain that students must stop immediately if a sample causes discomfort.

  4. 15–28 minutes – Individual evaluation of samples In groups of four or five, provide small, clearly labelled samples or photographs of two previously prepared smoothies. Distribute the smoothie evaluation and modification worksheet. Students independently record observations for each criterion, using a rating scale and evidence sentence. They should also note any safe processes they can see or remember from preparation. Ask: “Which modification is most likely to improve the product?” and “What would you test next time?” Students add one final improvement statement to their worksheet.

  7. 43–45 minutes – Exit reflection Finish with the plenary prompt. Students complete the final reflection on their worksheet: “The strongest evidence from my evaluation was…” and “My next smoothie would change…” Collect worksheets as students leave.
