Overview

Students trial and optimise Component 1 of their already-designed hybrid dessert: the foundational biscuit, pastry or cake element. Working in production teams, they use their existing design specifications to prepare a controlled trial, collect sensory and practical evidence, and identify an improvement before final production.

Lesson structure (81 minutes)

  1. 0–7 min · Hook and revisit the brief. Teacher displays a photograph of a deliberately over- or under-baked base and asks, “What evidence would show that this component is ready for our final dessert?” Open with the trialling hook and lesson goals and invite students to identify likely quality indicators. Students recall their three-component dessert, locate Component 1, and state one feature it must achieve.

  2. 7–15 min · Success criteria and safety briefing. Teacher reviews the class design specifications, hygienic food preparation, oven and equipment safety, cross-contamination prevention, and the trial process shown in safety, specification and trial-process slides. Distribute the Component 1 trial record. Students highlight the most important specification, assign team roles, and complete a safety check before collecting ingredients.

  3. 15–23 min · Plan the controlled trial. Teacher models how to identify variables: keep the recipe quantity, equipment and method consistent while recording purposeful observations such as spread, texture, colour, rise, snap or moisture. Students complete the worksheet planning box, allocate roles such as equipment manager, measurer, process recorder and hygiene checker, and predict the result.

  4. 23–53 min · Practical production trial. Teacher circulates between teams, checking safe practice, accurate measuring, appropriate tool use and links to the brief; pause the class briefly if a common issue arises. Students prepare Component 1 in their teams, record any deviations from the planned method, label the trial, and manage cooking or chilling safely. Students not actively using equipment complete observations and prepare the evaluation table.

  5. 53–65 min · Inspect and gather evidence. Teacher supports teams to assess the component only when safe to handle, using the prompts on observation and evidence slides; remind students to distinguish observation from opinion. Students record appearance, aroma, texture, taste where appropriate, structural performance and suitability for joining the other two components. Each student records an individual observation.

  6. 65–75 min · Evaluate and optimise. Teacher models a concise evaluation: “The base was too crumbly, so reducing the baking time may improve its ability to support the filling.” Students compare evidence with their specification, identify one successful feature and one limitation, then write one justified change for the next trial or final production. Teams discuss whether the change affects flavour, texture, appearance, function, time, cost or sustainability.

  7. 75–81 min · Clean-up and exit reflection. Teacher checks benches, equipment, storage and waste before inviting two teams to share evidence-based improvements. Students complete the final worksheet reflection: “Our component is/is not fit for purpose because… The next change we will make is…”, then give a confidence rating and submit the sheet.
