Teaching Instructions

how we use spices and herbs in food and how they affect food primary kids

Overview

A lively, sensory-focused 40-minute session designed for Year 6 students (ages 10-11) to understand how spices and herbs are used in food and how they affect flavour and nutrition. This lesson links to the National Curriculum for England in Design and Technology and Science, encouraging curiosity about ingredients, sensory evaluation, and healthy eating.

Learning Objectives

By the end of the lesson, pupils will be able to:

  • Understand the role of spices and herbs in cooking and their impact on flavour (Design and Technology: Cooking and Nutrition, NC: Years 5 and 6)
  • Identify common spices and herbs and describe their sensory properties (Science: Working Scientifically)
  • Explain simple benefits of herbs and spices in relation to healthy eating (Science: Animals, Including Humans; Healthy eating - Key Stage 2)
  • Apply observational and tasting skills to evaluate food samples with and without added spices/herbs (Design and Technology: Cooking and Nutrition)
  • Demonstrate teamwork and communication skills during group practical activities (Personal, Social and Emotional Development - cross-curricular skills)

National Curriculum Links

  • Design and Technology: Cooking and Nutrition:

    • Understand and apply the principles of a varied and balanced diet.
    • Prepare and cook a variety of predominantly savoury dishes safely and hygienically.
    • Understand seasonality, and know where and how a variety of ingredients are grown, reared, caught and processed.
  • Science: Working Scientifically and Animals, including humans:

    • Use observations and data to answer questions.
    • Understand nutrition and the impact of food choices on health.

Resources Needed

  • Small bowls with samples of basic dishes or crackers: plain, and versions flavoured with different herbs/spices (e.g., basil, cinnamon, black pepper, cumin)
  • Fresh or dried samples of herbs and spices for handling and smelling
  • Paper and coloured pencils for note-making
  • "Spice and Herb Cards" - pictures, names, and flavour descriptions
  • Hygiene supplies (hand sanitiser, wipes)
  • A tasting evaluation sheet with simple smiley/sad faces or word banks to describe taste, smell, and texture

Lesson Structure (40 minutes)

1. Introduction (5 minutes)

  • Welcome students and explain the session focus: how herbs and spices affect food and why they are important.
  • Show fresh or dried herbs/spices, encourage pupils to smell and touch them.
  • Ask: What herbs/spices do you already know? Where have you seen or tasted them before?

2. Interactive Discussion & Sensory Exploration (10 minutes)

  • Using Spice and Herb Cards, introduce 5 common examples (e.g., basil, rosemary, cinnamon, black pepper, mint).
  • Discuss flavour characteristics (e.g., sweet, spicy, earthy).
  • Pupils smell each sample and describe it aloud.
  • Quick talk about how herbs/spices have been used historically across the world to flavour food and preserve it.

3. Tasting Activity (15 minutes)

  • Pupils taste small samples of a plain cracker or bread and versions flavoured with different herbs/spices.
  • They complete a simple evaluation sheet by:
    • Selecting smiley faces to show which flavours they like or dislike.
    • Using descriptive words for taste and smell (teacher-supported).
  • Discuss: How did the herb/spice change the taste? Why might cooks add herbs or spices to food?
  • Highlight that herbs and spices are natural and often add nutritional benefits (briefly explain antioxidants or vitamins depending on level).

4. Creative Application (7 minutes)

  • Pupils design their own ‘perfect herb/spice blend’ for a simple dish (e.g., pasta, salad, soup) on paper using colouring pencils.
  • Encourage them to think about flavours that go well together and why.

5. Plenary and Assessment (3 minutes)

  • Each pupil shares their herb/spice blend and explains their choices.
  • Teacher uses questioning to assess understanding:
    • Why do people use herbs and spices in cooking?
    • How do herbs and spices make food more interesting and healthy?
  • Recap key points and praise participation.

Assessment

  • Observational assessment during sensory and tasting activities: engagement, ability to describe tastes and smells.
  • Evaluation sheets completed by pupils provide evidence of understanding preferences and sensory vocabulary.
  • Creative application drawing and explanation demonstrates ability to apply knowledge of herbs and spices in food.
  • Teacher questioning at plenary checks comprehension and ability to articulate learning.

Differentiation & Inclusion

  • Support pupils with sensory processing difficulties by offering gentle introductions to smells and tastes.
  • Use visual aids and word banks to support vocabulary.
  • Pair less confident pupils with peers for tasting and discussion to encourage participation.
  • Offer alternative activities such as drawing or matching herb/spice cards if tasting is not possible, due to dietary restrictions or allergies.

Extension Ideas

  • Encourage pupils to research herbs and spices from different cultures at home.
  • Plan a follow-up cooking session to incorporate pupil-designed spice blends.
  • Explore the history of spice trade and its impact on global culture (cross-curricular in History/Geography).

This lesson integrates sensory exploration with scientific enquiry and creative design, fully aligned with the National Curriculum expectations for Year 6, promoting an active, inclusive learning experience that enriches pupils’ understanding of food and nutrition.
