A lesson that focuses on how herbs and spices affect our food, the beneficial use and how they changeb the taste of food

Overview

This 40-minute lesson explores how herbs and spices affect the flavour, aroma, and health benefits of food. Designed for Year 6 students, the session aligns with the National Curriculum for England, focusing on developing scientific enquiry and healthy eating knowledge within Personal, Social, Health and Economic Education (PSHE) and Science. Students will engage in sensory activities and discussions to understand the functional and cultural role of herbs and spices in cooking.

National Curriculum Links

Science (Years 5 & 6 – Plants and Animals, including humans):

  • Recognise the impact of diet on health and wellbeing (Working scientifically: asking relevant questions, making observations and comparisons).
  • Explore and describe how plants and animals, including humans, need the right types and amounts of nutrition.

PSHE (Health and Wellbeing):

  • Recognise the importance of a balanced diet and how choices influence health.

Learning Objectives

By the end of the lesson, students will be able to:

  • Identify a range of common herbs and spices and describe how they affect the flavour and aroma of food.
  • Explain at least two health benefits associated with the use of herbs and spices.
  • Demonstrate the ability to conduct a simple sensory test to observe how herbs and spices change the taste profile of food.
  • Reflect on how herbs and spices contribute culturally and culinarily to different dishes.

Resources

  • Small samples of herbs (e.g., basil, mint, rosemary).
  • Small samples of spices (e.g., cinnamon, turmeric, black pepper).
  • Plain crackers or bread for tasting.
  • Disposable tasting spoons/plates.
  • Water for palate cleansing.
  • Whiteboards and markers or notebooks for recording observations.
  • Printed simple fact sheets on herbs and spices with health benefits.

Lesson Structure

1. Introduction (5 minutes)

  • Greet students and introduce the focus: "How herbs and spices change our food and benefit us."
  • Ask: “Can you name any herbs or spices you know? How do they change the food?”
  • Briefly explain the difference between herbs (leaves) and spices (roots, seeds, bark).

2. Sensory Exploration Activity (15 minutes)

  • Present a selection of herbs and spices (one at a time). Let students smell and describe the aroma. Write key adjectives on the whiteboard.
  • Provide plain crackers or bread. Use a pea-sized amount of each herb/spice alone and then in combination to taste.
  • Students record their taste impressions focusing on changes in flavour, aroma, and whether the taste is strong, mild, spicy, sweet, earthy, etc.
  • Discuss common culinary uses for each herb/spice and note any cultural references (e.g., cinnamon in Middle Eastern desserts, rosemary in Mediterranean dishes).

3. Health Benefits Discussion (10 minutes)

  • Using fact sheets, introduce simple health benefits of common herbs/spices such as:
    • Turmeric’s anti-inflammatory properties,
    • Cinnamon’s role in blood sugar regulation,
    • Mint’s aid in digestion.
  • Facilitate a discussion linking the use of herbs/spices to healthier eating and wellbeing.

4. Reflective Extension (7 minutes)

  • Challenge students to suggest how they might use herbs/spices in their own favourite dishes or meals at home to enhance taste and nutrition.
  • Through questioning, encourage students to think about cultural diversity in herbs/spices use and how this reflects different people’s tastes and traditions.

5. Plenary and Assessment (3 minutes)

  • Quick round: Each student states their favourite herb or spice from the lesson and one new thing they learned.
  • Assess understanding through their ability to describe taste changes and health benefits accurately.

Differentiation and Support

  • Provide visual aids and fact sheets with simple key points for learners who benefit from written support.
  • Use tasting activities for kinaesthetic learners to engage multiple senses.
  • Encourage verbal expression and paired discussion to support language development.

Assessment Opportunities

  • Formative assessment during discussions asking probing questions about taste and health.
  • Observation of students completing the sensory tasting and recording their findings.
  • Final plenary statements act as a quick verbal check of knowledge retention.

Extension Ideas

  • Encourage students to research a herb or spice not covered in class and present its uses and benefits in the next lesson.
  • Plan a simple cooking activity involving herbs/spices to consolidate learning practically.

This lesson creatively integrates sensory science with health education, meeting curriculum aims to develop understanding of nutrition and biology through engaging, hands-on learning within a small group.
