Overview

In this first lesson of a three-lesson design sequence, students develop and refine a pavlova dessert concept for sale at a farmers’ market. They will respond to a design brief, consider users and market context, and justify decisions about flavour, presentation, packaging, cost and food safety. Lesson 2 will develop the final design, evaluation and pitch; Lesson 3 will move from design into practical production.

Lesson structure (61 minutes)

  1. 0–7 min · Hook and context. Teacher displays the pavlova market hook and design brief showing two contrasting pavlovas and asks, “Which one would you buy at a farmers’ market, and why?” Students make an individual choice, then discuss visual appeal, likely customers, price, portability and perceived quality with a partner.   2. 7–16 min · Unpack the brief. Teacher uses the design brief and fit-for-purpose criteria to model the difference between a preference and a design requirement. Clarify that students are designing a concept today, not preparing food. Discuss the need to avoid unsupported health claims and to identify allergens such as egg and dairy where relevant.

  3. 16–25 min · Investigate and ideate. Teacher models rapid idea generation, combining a pavlova base with seasonal fruit, textures, sauces and presentation ideas. Students use the pavlova concept development worksheet to create three quick concept options, each including a target customer, flavour combination, serving format and packaging idea. Encourage quantity first; refinement comes later. Each student explains their concept in 60 seconds; peers give one strength, one concern and one actionable suggestion using the prompts: “This is fit for purpose because…”, “A possible issue is…”, and “To improve it, I suggest…” Students listen respectfully, record useful feedback and ask one clarifying question. Remind students to critique the design, not the person.

  6. 45–55 min · Refine and justify. Teacher models turning feedback into a design decision, such as changing a delicate topping or revising packaging for transport. Students revise their sketch and complete a short justification: “My target customer is… My concept meets the brief because… I changed… after feedback because… A production or safety consideration is…” Students who finish early estimate a realistic selling price and list the information they would need before confirming it.

  7. 55–61 min · Share and exit check. Teacher uses the plenary and exit prompts to invite two or three students to share a refined concept and one design decision. Students complete the final section of the concept review and next-step section: strongest feature, greatest risk, and one question to resolve in Lesson 2. Collect worksheets as evidence of progress and preview the final design, evaluation and pitch.
