Read this text about Māori hangi cooking:

Hangi is a traditional Māori method of cooking food using heated rocks buried in a pit oven. The process begins early in the morning when rocks are heated in a fire for several hours. Once the rocks are extremely hot, they are placed in a pit in the ground. Food such as meat, vegetables, and sometimes puddings are wrapped in leaves or cloth and placed on top of the hot rocks. The pit is then covered with earth and left for several hours. This slow cooking method gives the food a unique smoky flavour and has been used by Māori for over 700 years. Today, hangi is still popular for special occasions and community gatherings throughout New Zealand.
