Nutrition Escape Room

Aligned to the U.S. Department of Agriculture (USDA) Dietary Guidelines for Americans (DGA) and MyPlate Recommendations. Focuses on developing health literacy, critical thinking, and problem-solving skills.
Lesson Objectives:
By the end of this lesson, students will:
- Understand the 4 Dietary Guidelines for Americans and their importance in making healthy food choices.
- Identify nutrient-dense foods and understand their benefits.
- Describe foods and nutrients to include and limit based on the DGA.
- Explain the purpose of MyPlate and its recommendations for building balanced meals.
- Apply their knowledge in a team-based "Escape Room" challenge, encouraging collaboration and critical thinking.
Materials Needed:
- Props: Plastic food models, MyPlate poster (or large graphic), index cards, envelopes, and small prizes (stickers or bookmarks).
- Clues/Puzzles: Prepared paper clues, mini printable food labels, and QR code puzzles (if tech is available).
- Room Setup: Four challenge stations, each themed around one key principle of the Dietary Guidelines.
- Timer: Stopwatch or classroom timer.
- Large manila envelopes for teams to collect clues/tools.
- Markers, paper, and whiteboards for brainstorming.
Lesson Flow and Timing:
Hook (5 minutes) - "Breaking News: The Kitchen Lockdown"
Teacher starts by telling students they’ve been "locked" inside a virtual kitchen as part of a simulation to become healthy eating experts. To escape, they must solve clues using their knowledge of the Dietary Guidelines for Americans.
Storyline: A mysterious chef locked the kitchen because students didn’t follow the guidelines! Can they solve the puzzles in time for lunch?
Goal: Activate curiosity and introduce the relevance of dietary guidelines in fun, relatable terms.
Mini-Lesson (10 minutes) - Understanding the Key Concepts
Teacher briefly reviews key information to prepare students for the escape room challenge. Key points include:

The 4 Dietary Guidelines for Americans:
- Follow a healthy eating pattern at every life stage.
- Customize and enjoy nutrient-dense foods that reflect cultural and personal preferences.
- Focus on meeting food group needs with nutrient-dense foods and beverages.
- Limit foods/beverages high in added sugars, saturated fats, and sodium.

Escape Room Adventure (25 minutes)
Instructions: Divide the class into teams of 6 (6 groups total). Each team must solve puzzles at 4 stations in any order. Teams earn “keys” for every completed challenge. First team to collect all 4 keys and escape wins!

Station 1: MyPlate Match-Up
- Task: Students match food cards (pictures or models) to the correct food group on a blank MyPlate diagram.
- Bonus Puzzle: Rearrange scrambled letters to spell “Nutrient-Dense Foods.”
- Reward: First key and a clue for the next station.

Station 2: Include or Limit?
- Task: Students sort food labels into two piles: “Foods to Include” (e.g., spinach, whole-grain bread) and “Foods to Limit” (e.g., soda, candy).
- Bonus: Answer this question: “What are 2 benefits of nutrient-dense foods?”
- Reward: Second key and part of a riddle guiding them to the next station.

Station 3: Build A Meal
- Task: Based on a hypothetical scenario (e.g., “You’re packing a lunch for school”), students use food props or cards to create a balanced meal according to MyPlate guidelines.
- Bonus Challenge: What’s one way to cook foods without adding unnecessary fat?
Answer Examples: Bake, grill, or roast.
- Reward: Third key and a word scramble.

Station 4: Dietary Principles Puzzle
- Task: Students solve a jigsaw puzzle with phrases from the 3 Key Dietary Principles:
- Meet nutritional needs through healthy food/beverage choices.
- Choose nutrient-dense foods.
- Stick to calorie limits.
- Bonus Question: The DGA is designed for which group? Answer: People age 2+.
- Reward: Final key and congratulatory note to "unlock the kitchen."
Wrap-Up and Reflection (5 minutes)
Congratulate students and review their learning:
- Ask: “Which challenge did you find most difficult? Why?”
- Highlight healthy eating habits students can practice at home (e.g., drinking water, eating colorful meals, etc.).
- Distribute a MyPlate handout or small prize as a takeaway reminder.
Optional: For homework, have students create a MyPlate meal plan for one day and share with the class.
Teacher Tips:
- Use high energy and suspense! Add sound effects (a timer ticking, door unlocking) to enhance the escape room vibe.
- Support groups as needed, but let students drive the activity. Foster teamwork and problem-solving.
- Incorporate alternatives for students with dietary restrictions (e.g., gluten-free grains, plant-based proteins).
Assessment:
- Formative: Observe participation during challenges and listen to group discussions.
- Summative: Use a reflective exit slip with questions like, “What is one food habit you will try to practice this week?”
